It should be clear by now that I’m happiest when there is food. In the fridge, on the stove, in my belly, on the fork of my friend or loved one. My friends are food fans just like me. Luckily they are also open-hearted, charitable people who remember that not everyone has enough to eat.
A close friend of mine ate simpler for a week so she could donate her food budget to pay for school lunches for kids. Five dollars pays for 20 lunches — talk about a little that goes a long way! At the end of the week she had a comfort food-themed party and encouraged us to bring a dish and five bucks. We ate well: smoked paprika chicken, macaroni and cheese with kielbasa, guacamole and chips, bacon and chive biscuits. We also donated to make sure children can eat well, too. It was a great way to make us appreciate how easily we can eat our favorite dishes AND how simple it is for even poor post-grads to make a difference.
