Apple Cranberry Chutney
(This makes way more chutney than you need for the burgers, so feel free to halve the recipe):
- 3 apples, chopped
- 1 c. whole cranberry sauce
- Juice from 1 lemon
- 2 T rice vinegar
- 2 T sugar
- 1 onion, chopped
In a small saucepan heat lemon juice, sugar, and vinegar. Bring to a boil, reduce heat, and add half the apples. Simmer the apples until they are soft enough to mash with a potato masher. Add the onions and cook a little while longer until the onions soften. Remove from the heat and add the cranberries and the rest of the apples.
This is a pretty versatile and customizable chutney that can be used for all sorts of fall-inspired dishes!
