Easy Orzo and Tuna Salad

  • 1 cup orzo
  • 1 can tuna
  • 3 clementines, peeled
  • 5 baby carrots, chopped
  • 1/2 avocado, chopped

Cook the orzo according to the directions on the box.  Combine the orzo with the rest of the ingredients.  For the vinaigrette, combine the following in a jar:

  • 3 tbsp. olive oil
  • 1/2 tsp. dry mustard
  • Juice from half a lemon
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Adjust the vinaigrette to your tastes.  Shake well and toss with the salad.  Serve cold.
