Lemon Blueberry Oatmeal Pancakes

Lemon Blueberry Oatmeal Pancakes
Mix the following ingredients together in a large bowl:
- 1/2 c. white flour
- 1/2 c. wheat flour
- 1/3 c. sugar
- 1/2 t. baking soda
- 1 1/2 t. baking powder
Set aside. In another bowl, blend the following ingredients:
- 1 egg
- Zest from 2 lemons
- 1/4 c. fresh lemon juice
- 1 1/2 t. vanilla
- 1/2 c. milk
- 1/2 c. sour cream or plain yogurt
- 3 T melted butter
Pour the liquid ingredients into the flour mixture and blend.

Add in 1/2 c. frozen or fresh blueberries and 1/2 c. quick oatmeal. I used quick oatmeal specifically; old-fashioned oats would probably need to be cooked first.
Cook in a hot, greased skillet or griddle as you would normal pancakes. Makes 6 large pancakes or 10 small ones. Serve with maple syrup, fruit compote, fresh fruit, peanut butter — whatever you like! I ate mine with a classic side of eggs and bacon:
