Page’s Chili

This recipe makes a huge vat of chili, so plan on eating some tonight and freezing some for later.
- 2 bell peppers, chopped
- 2 onions, chopped
- 1-2 garlic cloves, minced
- 1 lb. ground turkey, chicken or beef
- 48 oz. crushed tomatoes
- 2 14 oz. cans kidney beans
- 3 bay leaves
- 3 T. chili powder (adjust to your tastes)
- 1/2 T. crushed red pepper (adjust to your tastes)
Heat 1 T olive oil in a skillet. Add peppers, onions, and garlic and saute for a few minutes.
Add about 1 lb. turkey or beef and cook until brown.
Once the beef is fully cooked, drain the fat and put beef and vegetables in a large pot. To the pot add: crushed tomatoes, kidney beans, bay leaves, chili powder, and crushed red pepper. Let simmer on low for about 45 minutes. I like my chili with some kind of starch, such as: tortilla chips, corn bread, noodles, or a baked potato.
