Pumpkin Ricotta Pancakes
Pumpkin Ricotta Pancakes
Makes about 14 pancakes
Whisk together (I used my KitchenAid mixer for this):
- 1/2 c. white flour
- 1 1/2 c. wheat flour
- 1 3/4 T. baking powder
- 1 t. salt
- 1 t. cinnamon
- 1/8 t. nutmeg
In another bowl mix:
- 1 1/2 c. milk
- 3 T. brown sugar
- 2 eggs
- 3 T. butter, melted
- 1/2 c. canned pumpkin
- 1/3 c. ricotta cheese
Mix the wet ingredients into the dry ingredients (again, I used my mixer). Cook over medium-high heat on a griddle or non-stick pan.
These pancakes are very filling and not as sweet as plain pancakes. Makes them all the better with a little maple syrup!
